We start with honey from French Hill Apiary here in Vermont to make our off-dry sparkling mead. The 2020 season of honey blend we used was nectar from sumac, wildflower, basswood, and clover. The raw honey has a mild flavor and soft finish. Our mead was fermented with a mixed culture in oak and aged in a clay Amphora with fresh Yuzu fruit grown by Bhumi Growers, in New Jersey. We finished the mead with a light sparkle, conditioned naturally in the bottle. Enjoy at room temperature or slightly chilled. 11.4% Alc.
